With just over 7 weeks left to go until iba 2025, happening from 18 - 22 May 2025, the world of baking is evolving, blending tradition with cutting-edge innovation. At this year's leading trade fair for the baking sector, a brand new concept is set to captivate professionals and enthusiasts alike: the iba.FOOD TRENDS AREA.


Located in Hall 15, this dynamic space will showcase the latest industry trends, from innovative raw materials and baking ingredients to snack ideas and health-conscious alternatives. Visitors will not only see and hear about these trends but also taste them, experiencing firsthand the flavours shaping the future of baking.


The Rising Demand for Conscious Eating


One of the key themes dominating this year’s iba is the growing focus on conscious, mindful eating. Consumers are increasingly drawn to gluten-free and vegan alternatives, high-fibre ingredients and reduced sugar and fat content. Protein-rich and sustainable ingredients are also at the forefront, highlighting the industry's shift towards healthier and more responsible production methods. Moreover, local authenticity is taking centre stage, with consumers showing a preference for baked goods featuring regional ingredients.


Exhibitor Highlights at iba.FOOD TRENDS AREA


Hall 15 will be transformed into a food trends boulevard, with exhibitors presenting their expertise on individual ‘island stands’. Some of the key exhibitors include:


  • Zeelandia (Netherlands) – Celebrating its 125th anniversary, Zeelandia will highlight innovative baking ingredients and application solutions, with a special focus on freshness. Robrecht de Baets, Head of Industry Europe says.

  • Loryma – A specialist in protein and starch-based food ingredients, presenting application-oriented solutions.

Creating Moments of Flavourful Enjoyment


Taste remains paramount in the baking industry. At iba, visitors can explore new flavour trends, from indulgent chocolate combinations to versatile fruit and cream fillings. The trend of fermented sourdoughs continues to gain traction, with exhibitors presenting high-quality baker's yeasts and enzyme-based solutions tailored to modern baking needs. For those who love colourful baked goods, toppings with natural colour origins will impress with their rich, chocolate-infused profiles.


A Glimpse into the Future of Baking


Exhibitor Lesaffre invites visitors to an immersive ‘Future Experience’ based on trend analysis. Through interactive tastings and demonstrations, they will present three future scenarios aligned with their commitments: Bake for Good, Bake for Care, and Bake for Smile.

Brands such as Puratos, Dawn Foods, Food Colours, Kandy, Interstarch, Pavoni Italia, Soy Austria, Eurogerm and Fine Organics will be present to offer insights into emerging trends.
