The offerings of bakeries and pastry shops have changed massively. In addition to traditionally handcrafted breads and baked goods with regional ingredients, the selection has multiplied: snacks, vegan pastries, coffee and tea specialties are the drivers of lucrative additional business. INTERNORGA 2024, the leading trade fair for the out-of-home market, will show which snack trends will be popular in the future and which vegan specialties consumers will choose in the future from March 8th to 12th, 2024 in Hamburg.

Baking companies have been significantly expanding their offerings for a long time. Demand has increased particularly in the area of ​​snacks and vegan alternatives. Many manufacturers have responded to the new needs and wishes of consumers with innovative strength and creativity and developed contemporary products. At INTERNORGA 2024, visitors from the baking industry can discover the latest trends for a sustainably successful business

 

Snacking is in! This sums up the ongoing preference for snacking products. More and more people prefer a tasty snack with fresh ingredients at lunchtime. Snack products should fit perfectly into the modern lifestyle and also meet the needs of health-conscious people. Vegan, fresh, sustainable, regional, organic and, preferably, good for your health – these are the current wishes of consumers. Snackification offers far-reaching opportunities for bakeries and pastry shops. Rich and freshly topped sandwiches, bagels, wraps and ciabattas have long been classics and are an integral part of bakeries' ranges. New creations such as the "croissandwich" have been added: lavishly topped and filled croissants – whether sweet or salty – are very trendy. Their appealing appearance in particular can ensure high reach and great attention on social media channels. The round croissant variants are just as Instagrammable. The "New York Rolls" from Bridor's "Bun'n'Roll" series can be combined with various toppings as desired and become colorful eye-catchers. Or the cube-shaped filled "cube croissants" that are conquering more and more bakeries around the world.

The classic sandwich is also experiencing a revival - colorfully topped with crisp lettuce, quinoa, microgreens, nuts and fruit, the sandwich becomes a real power fitness snack. Asian fluffy bao bun rolls, heartily filled and vegan, conjure up the world's baking culture in the display cases. More fusion in the area of ​​snacks is offered, for example: B. the "Focaccia Toast", a combination of Italian focaccia and toast that Vandemoortele developed, or the "Pizza Donut" from Bakerman.

 

The focus is on vegan baked goods and exceptional coffee and tea compositions.

 

Classics – but as vegan alternatives – are more popular than ever. The demand for vegan products and baked goods has increased significantly in recent years, as has the desire for healthy eating. Vegan croissants, pretzel sticks, cakes, sandwiches as well as cookies and stollen have long been part of the repertoire of bakeries and pastry shops in some places. National and international manufacturers have developed many new products to meet this growing demand. These can be found at INTERNORGA 2024. Many exhibitors such as Aryzta present a wide range of products made from purely plant-based ingredients, including baguettes, rolls, croissants, bagels and focaccia. Or sweet vegan classics such as those from Baker & Baker, which present a selection of donuts, muffins and chocolate cookies.

No snack or pastry without a drink: hot drinks are particularly popular, as they also help to sustainably increase a company's sales. Regardless of whether it's the classic cappuccino, caffè latte, milk alternatives with, for example, oats, soy or peas as well as new creations such as matcha or beet latte - at INTERNORGA 2024, exhibitors will show the latest coffee and tea trends.
